Awesome Sauce:

  • ½ cup mayonnaise 
  • 2 tablespoons sour cream
  • 2 tablespoons ketchup, or Sriracha if you like it spicy
  • 2 tablespoons pickles, minced
  • 2 tablespoons red onion, grated
  • 1 teaspoon worcestershire sauce
  • 2 teaspoons lemon juice
  • sea salt, to taste
  • black pepper, freshly ground, to taste

Burgers:

  • 1 pound ground beef, with at least 20% fat
  • Sea salt
  • 4 slices american or cheddar cheese
  • 4 potato buns, toasted
  • White onion, sliced 
  • 2 pickles, thinly sliced
  • ¼ head iceberg lettuce, finely shredded

Instructions

  1. Make the Awesome Sauce:
    Whisk all sauce ingredients in a bowl until smooth. Taste and adjust seasoning. Cover and refrigerate until ready to use.

  2. Shape the Patties:
    Divide the beef into 4 equal portions. Gently shape into patties without overmixing.

  3. Sprinkle each side with salt and pepper. Grill or sear in a hot skillet over medium-high heat for 4–5 minutes per side. Add cheese during the last minute so it melts over the top.

  4. Toast the Buns:
    Optional—but highly recommended. Toast cut sides of buns on the grill or in a skillet until golden.

  5. Assemble the Burgers:
    Spread awesome sauce on the bottom bun. Add patty, lettuce, pickles, onion, more sauce, and the top bun. Serve hot.

Notes

Yes, you need the fat. That 80/20 ground beef ratio is where the juiciness lives. Lean meat just won’t give you the same result.

About the awesome sauce: it’s a little sweet, a little tangy, and ridiculously addictive. Want it spicier? Swap in Sriracha or hot sauce instead of ketchup.

Pro tip on buns: Toasting them makes a huge difference. The crispy edges + juicy burger = everything.
