Easy Chewy Matcha Cookies

These chewy matcha cookies are slightly crisp at the edges with soft, barely baked centers that ooze matcha and chocolate peppermint bark.

Matcha is a finely ground, vibrant green tea powder made from shade-grown tea leaves. It is also is known for its versatility, being used in a variety of culinary creations.

What is Matcha?

All-purpose Flour Matcha Powder Baking Soda Cornstarch Sea Salt Unsalted Butter Brown Sugar Granulated Sugar Egg Peppermint Bark Pieces, White Chocolate, or Chocolate Chips

Ingredients

In a medium bowl, whisk together the flour, matcha powder, baking soda, cornstarch and salt.

In a large bowl, beat the butter and both sugars together until light and fluffy.  Beat in the egg until combined.

Add the dry ingredients to the wet ingredients and use a spatula to mix until just combined. Do not over-mix.

Gently fold in peppermint bark or chocolate chips if using.
